Chef Earl’s Beer Barrel Shrimp


2 Tbl Olive Oil
2 Tbl Butter
1/8 Tsp Salt
1 Tsp fresh cracked Black Pepper
2 Cloves Garlic – chopped
¼ Tsp Cayenne Pepper
Juice of ½ medium Lemon
10 Large (U-12) Head-On Shrimp – FRESH NOT FROZEN
1 Cup ABITA AMBER type beer
1 Tbl Chopped flat leaf Parsley


In a 10 to 12” skillet heat Olive Oil and Butter over medium high heat. When hot, add garlic and saute quickly, do not brown. Add shrimp and toss till pink, add salt, pepper, cayenne, lemon juice, stir and add beer, raise heat to high and stir while liquid is reduced by half. Add parsley and serve with hot french bread; don’t burn your fingers!!!!
